Venue: 'The Laurels', Western Road, UCCThis course will introduce participants to the history of Irish food and cookery. Food and culinary history is an emerging area of study in Ireland. While food and agriculture are the country’s largest indigenous industries, little academic attention has been given to the study of Irish food and culinary history and the related concerns of traditional food and food heritage. Using the recipe, this course will guide students through the history of Irish food in the seventeenth century and through the Georgian and Regency periods. It will look at the changes in dietary patterns in the post-Famine period and it will explore how these changes are reflected in recipe collections. The course will also look at food, cookery and dietary patterns in the twentieth century.
